So this is the beginning of Week #2 of my Lunch Challenge (not buying lunch or snacks during the work day until the end of the year). Week #1 went well, although it was only a 4-day work week due to Thanksgiving. I had soup all 4 days. So in an effort to change it up, last night I made tuna salad sandwiches for both BF and I to bring for lunch today.
I used to bring dinner leftovers for lunch, but I find that our dinners are usually the heaviest meal of the day, so I just ended up feeling tired and sluggish after lunch. I like light lunches, so making a big batch of dinner works for BF, but not for me.
Here are some light lunch options that I like to eat on a regular basis:
I usually get hungry again around 3 or 4pm, so my usual snack is a piece of fruit and a granola bar or crackers. And that lasts me until we have dinner.
A few other things that I should mention: I do not eat breakfast, I try to only eat when I’m hungry, and I am drinking tea (at least 3 or 4 cups) and water constantly throughout the day.
What are some light lunch options that you make? Any lunch suggestions (keeping in mind that we don’t have a stove at our house)?
